Fixes:
- Subshell capture: all interactive UI output via >&2
- download_telemt: extract to dedicated dir (no find -newer)
- log_* functions: output to stderr
- confirm/select_option: output to stderr

Tested on VPS (Ubuntu 24.04): 14/14 tests PASS
- Quick mode install/start/restart/stop/remove
- Stealth config generation
- Backup/restore
- telemt update check
- Proxy link generation
